- 1 pound chicken breast, diced
- 1 cup jasmine rice
- 1 tablespoon olive oil
- 1/4 cup mayonnaise
- 2 tablespoons sweet chili sauce
- 2 teaspoons Sriracha sauce
- 1 teaspoon garlic powder
- 1 teaspoon ginger, minced
- 1 cup broccoli florets
- 1 cup bell pepper, sliced
- 1/4 cup green onions, sliced
Instructions
- Cook jasmine rice according to package instructions.
- In a skillet, heat olive oil over medium heat and add diced chicken. Cook until browned and cooked through.
- In a small bowl, mix mayonnaise, sweet chili sauce, Sriracha, garlic powder, and ginger together.
- Once chicken is cooked, pour the sauce over the chicken and stir to coat.
- Add broccoli and bell peppers to the skillet and sauté until vegetables are tender.
- Serve chicken and vegetables over rice and garnish with green onions.
