Delicious homemade sourdough pop tarts filled with your favorite jam or pastry cream, perfect for breakfast or snacks.
Ingredients

- 2 cups all-purpose flour
- 1 cup sourdough starter
- 1/2 cup unsalted butter, cold and cubed
- 1/4 cup granulated sugar
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 1/2 cup jam or pastry filling
- 1 egg (for egg wash)
Instructions
- In a large bowl, combine flour, cold butter, sugar, and salt. Mix until crumbly.
- Add the sourdough starter and vanilla extract, mixing until a dough forms.
- Chill the dough in the refrigerator for about 30 minutes.
- Roll out the dough on a floured surface and cut into rectangles.
- Place filling in the center of half the rectangles, then top with remaining rectangles.
- Seal the edges with a fork and brush with the egg wash.
- Bake at 375°F (190°C) for 20-25 minutes or until golden brown.
- Allow to cool before serving.
