Description
A rich and indulgent no-bake Snickers cheesecake with a buttery biscuit base, creamy chocolate filling, and chunks of Snickers in every bite.

- 250g digestive biscuits
- 125g butter, melted
- 190g milk chocolate, melted
- 500g cream cheese, softened
- ¼ cup brown sugar
- 2 Snickers bars, diced
- 125g thickened cream
- 2 Snickers bars, chopped (for topping)
Instructions
- Line the base of a 23cm springform tin with baking paper.
- Crush the digestive biscuits into fine crumbs using a food processor.
- Add the melted butter to the crumbs and mix until fully combined.
- Press the mixture firmly into the base of the tin and refrigerate while preparing the filling.
- Melt the milk chocolate and allow it to cool slightly.
- In a mixing bowl, beat the cream cheese and brown sugar until smooth and creamy.
- Add the melted chocolate and mix until fully incorporated.
- Fold in the diced Snickers bars.
- Add the thickened cream and mix for about 1 minute until thick and smooth.
- Pour the filling over the chilled base and smooth the top.
- Sprinkle chopped Snickers over the top.
- Refrigerate overnight (at least 12 hours) until fully set.
- Remove from the tin, let sit at room temperature for 20 minutes, slice, and serve.
