Ingredients

  • 1.5 lbs boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon grated fresh ginger
  • 2 medium potatoes, peeled and diced
  • 2 medium carrots, sliced
  • 1 cup chicken broth
  • 1 tablespoon yellow curry powder
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 0.5 teaspoon ground coriander
  • 0.25 teaspoon cayenne pepper (optional)
  • 0.5 teaspoon salt, or to taste
  • 0.5 cup plain Greek yogurt or light coconut milk
  • Fresh cilantro and lime wedges for garnish (optional)

Instructions

  1. Place the cut chicken, diced onion, minced garlic, grated ginger, diced potatoes, sliced carrots, chicken broth, yellow curry powder, turmeric, cumin, coriander, cayenne pepper (if using), and salt into your slow cooker insert.
  2. Stir everything together to ensure it is well combined.
  3. Cook on LOW for 6-8 hours or on HIGH for 3-4 hours, until the chicken is cooked through and vegetables are tender.
  4. About 30 minutes before serving, stir in the Greek yogurt or light coconut milk until incorporated for creaminess.
  5. Ladle the yellow chicken curry into bowls and garnish with fresh cilantro and lime wedges, if desired.
