Description

Ingredients

  • 1 lb flank steak
  • 2 tablespoons extra virgin olive oil
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 medium sweet onion, sliced
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 8 oz queso blanco cheese, shredded
  • Fresh cilantro for garnish

Instructions

  1. Slice flank steak against the grain into thin strips. Chop the bell peppers and onion.
  2. Heat olive oil in a large skillet over medium-high heat. Add steak and season with salt, pepper, garlic powder, and cumin. Cook until browned.
  3. Add chopped bell peppers and onions to the skillet; stir occasionally until softened.
  4. Lower heat slightly and sprinkle shredded queso blanco over the steak and veggies. Cover for 2-3 minutes until cheese melts.
  5. Garnish with fresh cilantro before serving.
