- 2 tablespoons extra virgin olive oil
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 medium sweet onion, sliced
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- Salt and pepper to taste
- 8 oz queso blanco cheese, shredded
- Fresh cilantro for garnish
Instructions
- Slice flank steak against the grain into thin strips. Chop the bell peppers and onion.
- Heat olive oil in a large skillet over medium-high heat. Add steak and season with salt, pepper, garlic powder, and cumin. Cook until browned.
- Add chopped bell peppers and onions to the skillet; stir occasionally until softened.
- Lower heat slightly and sprinkle shredded queso blanco over the steak and veggies. Cover for 2-3 minutes until cheese melts.
- Garnish with fresh cilantro before serving.
