Ingredients

Scale
  • 1 pound Ground Beef (Can substitute with ground turkey)
  • 1 cup Breadcrumbs (Use gluten-free for a gluten-free version)
  • 1 large Egg (Flax egg for vegan options)
  • 1 large Onion (Chopped) (Shallots can be substituted)
  • 2 cloves Garlic (Minced) (Garlic powder can be used)
  • 2 tablespoons Worcestershire Sauce (Soy sauce can be used)
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1 teaspoon Dried Thyme (Dried Italian seasoning can be used)
  • 1 tablespoon Olive Oil (Butter or another oil can be used)
  • 2 cups Beef Broth (Vegetable broth can be substituted)
  • 2 tablespoons Cornstarch (All-purpose flour can be substituted)
  • 2 pounds Potatoes (Peeled and Chopped) (Yukon Gold recommended)
  • 1/2 cup Milk (Cream or non-dairy milk for lactose-free options)
  • 1/4 cup Butter (Olive oil for dairy-free option)
  • 1/4 cup Fresh Parsley (Chopped)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine ground beef, breadcrumbs, egg, chopped onion, minced garlic, Worcestershire sauce, salt, pepper, and dried thyme. Mix until just blended for tenderness.
  3. Form the mixture into 1-inch meatballs and place them on a parchment-lined baking sheet.
  4. Bake the meatballs for about 20 minutes, until golden brown.
  5. In a skillet, heat olive oil over medium heat and sauté sliced onion and minced garlic.
  6. Pour in beef broth and Worcestershire sauce, bringing it to a gentle simmer. Whisk in cornstarch slurry until thickened.
  7. Boil peeled and chopped potatoes until fork-tender, about 15-18 minutes. Drain and mash with milk, butter, salt, and parsley until smooth.
  8. Once cooked, coat meatballs in gravy and serve over garlic herb mashed potatoes.
