Description
These chocolate peanut butter Ritz cracker cookies are a sweet and salty no-bake treat.
Ingredients

- 2 cups milk chocolate chips
- 1/2 cup creamy peanut butter
- 1/4 cup powdered sugar (sifted)
- 32 Ritz crackers
Instructions
- Line a baking sheet with parchment paper and set aside.
- In a mixing bowl, add the creamy peanut butter and sifted powdered sugar. Whisk or stir until smooth.
- Lay out 32 Ritz crackers, flat side down. Spread peanut butter mixture on half of them.
- Top each filled cracker with another cracker to form a sandwich.
- Press together and place on the baking sheet.
- Transfer to the freezer and chill for about 30 minutes.
- In a heatproof bowl over simmering water, melt the chocolate chips, stirring until smooth.
- Remove sandwiches from the freezer and dip each into melted chocolate.
- Let excess chocolate drip off and place back on the baking sheet.
- Repeat with remaining sandwiches.
- Let cookies sit at room temperature until chocolate sets, about 1 hour.
- Carefully peel cookies off the parchment and serve.
Notes
- Store cookies in an airtight container.
- Use dark chocolate for a richer flavor.
- Chill longer if needed for a firmer filling.
