Instructions

  1. Prepare Ingredients: Start by finely grinding the shelled pistachios. In a mixing bowl, combine them with all-purpose flour, baking powder, and salt.
  2. Make Cake Batter: Beat the softened unsalted butter and granulated sugar together until fluffy, about 3-5 minutes. Add eggs one at a time, then mix in the whole milk, vegetable oil, and vanilla extract. Carefully fold in the dry pistachio mixture until just combined.
  3. Bake Layers: Divide the batter evenly between greased 8-inch round cake pans. Bake at 350°F (175°C) for 22-25 minutes, until a toothpick inserted in the center comes out clean. Remove from the oven and let cool in the pans for 10 minutes before transferring to a wire rack.
