- 1 pound chicken breast, diced
- 1 tablespoon Cajun seasoning
- 1 tablespoon olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 cups orzo pasta
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup Parmesan cheese, grated
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Heat 1 tablespoon olive oil in a large pot over medium heat.
- Toss the diced chicken with Cajun seasoning and add to the pot, cooking for 5–6 minutes until browned.
- Add the chopped onion and minced garlic, sautéing until the onion is translucent (about 3–4 minutes).
- Stir in the orzo and coat it in the oil for 30–60 seconds.
- Pour in the chicken broth and bring to a boil.
- Reduce heat to a simmer and cook for 10–12 minutes, stirring occasionally.
- Remove from heat and stir in heavy cream and Parmesan until smooth.
- Season with salt and pepper as needed and garnish with parsley before serving.
