Description

Ingredients

  • 1 pound chicken breast, diced
  • 1 tablespoon Cajun seasoning
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 cups orzo pasta
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup Parmesan cheese, grated
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat 1 tablespoon olive oil in a large pot over medium heat.
  2. Toss the diced chicken with Cajun seasoning and add to the pot, cooking for 5–6 minutes until browned.
  3. Add the chopped onion and minced garlic, sautéing until the onion is translucent (about 3–4 minutes).
  4. Stir in the orzo and coat it in the oil for 30–60 seconds.
  5. Pour in the chicken broth and bring to a boil.
  6. Reduce heat to a simmer and cook for 10–12 minutes, stirring occasionally.
  7. Remove from heat and stir in heavy cream and Parmesan until smooth.
  8. Season with salt and pepper as needed and garnish with parsley before serving.
