  • 3 medium extra ripe bananas
  • 1 cup white granulated sugar
  • ⅓ cup canola oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 ⅓ cups all-purpose flour

  • ½ teaspoon salt

Instructions

  1. Preheat your oven to 350°F. Lightly spray a 9X5 loaf pan with nonstick spray and line the bottom and 2 sides with parchment paper.
  2. In a large bowl, mash the bananas with a fork until smooth.
  3. Add the sugar to the mashed bananas and mix well. Stir in the eggs, canola oil, and vanilla extract until everything is combined.
  4. Sift together the flour, baking soda, and salt. Gently fold this dry mixture into your banana mixture until just combined.
  5. Pour the batter into your prepared loaf pan and bake for 40-45 minutes, or until a toothpick inserted comes out clean.
  6. Once baked, let the banana bread cool in the pan for about 10 minutes before transferring it to a wire rack.
