- 3 medium extra ripe bananas
- 1 cup white granulated sugar
- ⅓ cup canola oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 ⅓ cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
Instructions
- Preheat your oven to 350°F. Lightly spray a 9X5 loaf pan with nonstick spray and line the bottom and 2 sides with parchment paper.
- In a large bowl, mash the bananas with a fork until smooth.
- Add the sugar to the mashed bananas and mix well. Stir in the eggs, canola oil, and vanilla extract until everything is combined.
- Sift together the flour, baking soda, and salt. Gently fold this dry mixture into your banana mixture until just combined.
- Pour the batter into your prepared loaf pan and bake for 40-45 minutes, or until a toothpick inserted comes out clean.
- Once baked, let the banana bread cool in the pan for about 10 minutes before transferring it to a wire rack.
