- 1/2 cup butter, softened
- 1 cup granulated sugar
- 2 eggs, beaten
- 3 medium-large overripe bananas, mashed (or 4 small)
- 1 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tbsp vanilla extract
- 3/4 cup semi-sweet chocolate chips or chopped nuts (optional)
- 1 tbsp all-purpose flour (for tossing optional add-ins)
Instructions
- Preheat oven to 350°F (175°C). Grease and lightly flour a loaf pan.
- In a large bowl, cream together the softened butter and sugar until light and fluffy.
- Add the beaten eggs and mashed bananas; mix until well combined.
- In a separate bowl, whisk together flour, baking soda, and salt.
- Gradually add dry ingredients to the wet mixture, mixing until just combined. Do not overmix.
- Stir in vanilla extract.
- If using chocolate chips or nuts, toss them in 1 tbsp of flour and gently fold them into the batter.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 55–65 minutes, or until a toothpick inserted into the center comes out almost clean.
- Allow the bread to cool in the pan for 20 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
- Use very ripe bananas with dark spots for maximum flavor and sweetness.
- Do not overmix the batter to keep the loaf tender and fluffy.
- Toss optional add-ins with flour to prevent them from sinking to the bottom.
