Mini Christmas Cheesecakes are creamy, bite-sized holiday treats made with a buttery biscuit base and festive toppings.
Ingredients

- 85g digestive biscuits or graham crackers (about 6)
- 40g melted butter
- 250g cream cheese (full fat)
- 50g caster sugar
- 1 tsp vanilla extract
- 1 large egg
- 50g sour cream
- 1 tsp lemon juice (optional)
- Whipped cream
- Festive sprinkles
- Crushed candy canes
- Mini meringues
- Fresh berries or mint leaves
Instructions
- Preheat oven to 160°C (320°F). Crush biscuits into fine crumbs and mix with melted butter.
- Line a muffin tin with cupcake cases. Add 1 tablespoon of crumb mixture to each and press firmly. Bake 5 minutes; cool slightly.
- Beat cream cheese until smooth. Add sugar and vanilla, then the egg. Mix in sour cream and lemon juice without overbeating.
- Spoon filling into liners, about 3/4 full. Bake 15–18 minutes until centers are just set.
- Cool in tin 10 minutes, transfer to rack, then chill at least 4 hours or overnight.
- Top with whipped cream, sprinkles, candy canes, or your favorite festive toppings.
