Description

This Mexican Lasagna with Tortillas is a delightful twist on comfort food, filled with flavorful layers of tortillas, seasoned meat, cheese, and more.

Ingredients

Scale
  • 2 tablespoons Olive Oil (for sautéing)
  • 1 medium Onion (diced)
  • 2 cloves Garlic (minced)
  • 1 pound Ground Meat (beef, turkey, or chicken)
  • 2 tablespoons Taco Seasoning (to taste)
  • 1 can Canned Tomatoes (diced or crushed)
  • 1 can Black Beans (drained and rinsed)
  • 1 cup Sweet Corn (canned or frozen)
  • 1 teaspoon Paprika (optional)
  • 8 tortillas Tortillas (flour or corn)
  • 1 cup Sour Cream (or Greek yogurt)
  • 1 cup Enchilada Sauce (homemade or store-bought)
  • 2 cups Cheese (cheddar or Monterey Jack, shredded)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add diced onion and sauté until translucent, about 3-4 minutes. Stir in minced garlic for an extra minute until fragrant.
  2. Introduce the ground meat to the skillet, breaking it apart with a spatula. Cook until browned, ensuring it’s fully cooked through.
  3. Stir in the taco seasoning, canned tomatoes, black beans, corn, and paprika. Let the mixture simmer for 5-6 minutes to thicken and allow flavors to meld.
  4. Preheat your oven to 375°F (190°C). Meanwhile, grease a 9×13-inch baking dish to prevent sticking.
  5. Start with 2 tortillas as the base layer in the baking dish. Evenly distribute the meat mixture, followed by a layer of sour cream, enchilada sauce, and cheese. Repeat layers until all ingredients are used, ensuring tortillas are on top.
  6. Cover the baking dish with foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10-12 minutes, or until the cheese is golden and bubbly.
  7. Allow the Mexican Lasagna to rest for 5-10 minutes before slicing. Serve garnished with fresh avocado, cilantro, and lime for an extra pop of flavor.
