A Refreshing Mediterranean Veggie Salad


Ingredients

  • 1 large cucumber, diced
  • 1 large tomato, diced
  • 1 red onion, thinly sliced
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Dice the cucumber and tomato into small, bite-sized pieces. Slice the red onion thinly. Chop the Kalamata olives into smaller pieces if you prefer them in smaller bites.
  2. In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper.
  3. In a large mixing bowl, combine the diced cucumber, tomato, red onion, and olives. Pour the dressing over the salad and toss gently to coat everything evenly.
  4. Once everything is mixed, your Mediterranean veggie salad is ready to serve. Enjoy it immediately, or chill it in the fridge for about 30 minutes to let the flavors marinate.
