- 1 cup Green olives
- 1 cup Feta cheese
- 1 bunch Fresh parsley
- 1 bunch Fresh dill

- 1/4 cup Lemon juice (Fresh-squeezed)
- 2 tablespoons Red wine vinegar
- 1 tablespoon Dijon mustard (Optional)
- 1 clove Garlic (Minced)

Instructions
- Prepare Potatoes: Start by washing and cutting your Yukon Gold or red potatoes into uniform sizes. Boil in salted water for about 15-20 minutes, or until tender. Drain and allow to cool completely.
- Make Dressing: In a separate bowl, whisk together high-quality extra virgin olive oil, fresh lemon juice, red wine vinegar, Dijon mustard (if using), and minced garlic. Season with salt and pepper to taste.
- Combine Ingredients: In a large mixing bowl, gently fold in the cooled potatoes, Kalamata and green olives, crumbled feta cheese, fresh parsley, and dill. Mix until everything is combined.
- Add Dressing: Drizzle the dressing over the potato mixture and gently toss until all the ingredients are well coated and glistening.
- Serve or Chill: You can serve immediately for warm flavors or let the salad sit for 30 minutes in the refrigerator to enhance the flavors. Either way, it’s delightful!
