Description

These no-bake Matcha Coconut Balls are quick, easy, and delicious treats made with almond flour, coconut, and matcha powder. They’re coated in a white chocolate glaze and are naturally gluten-free.


Ingredients

  • 1 cup shredded unsweetened coconut
  • 2 teaspoons matcha powder (culinary grade)
  • 3 tablespoons honey (or maple syrup for vegan)
  • 3 tablespoons coconut oil, melted
  • 23 tablespoons almond milk, as needed
  • 1 cup white chocolate (or vegan white chocolate)
  • 1 teaspoon matcha powder (for glaze)
  • 1 teaspoon coconut oil, melted (for glaze)
  • 2 tablespoons shredded unsweetened coconut (for topping)

Instructions

  1. In a bowl, whisk together almond flour, shredded coconut, and matcha until evenly combined.
  2. Stir in honey and melted coconut oil until the mixture clumps.
  3. Add almond milk 1 tablespoon at a time until the dough presses together easily.
  4. Scoop about 1 tablespoon of dough, roll into smooth balls, and place on a parchment-lined tray. Repeat with remaining mixture.
  5. Chill the balls in the refrigerator for 30 minutes to firm up.
  6. For the glaze, melt white chocolate with coconut oil in short bursts in the microwave (or over a double boiler) until smooth.
  7. Whisk in matcha powder until evenly green.
  8. Dip each chilled ball into the glaze, let excess drip off, and return to the tray.
  9. Immediately sprinkle with shredded coconut.
  10. Chill for 15–20 minutes until the glaze is set. Serve chilled or at cool room temperature.
