- 1 pound cheese tortellini
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 1 cup heavy cream
- 3 cups fresh spinach
- 1/2 teaspoon crushed red pepper flakes
- 1 cup provolone cheese, shredded
- Salt and pepper to taste
Instructions
- Cook the tortellini according to package instructions; drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add onion and garlic; sauté until softened.
- Add the diced tomatoes, and bring to a simmer.
- Stir in heavy cream, spinach, and red pepper flakes; cook until spinach wilts.
- Toss in the cooked tortellini and provolone cheese; mix until well combined and cheese is melted.
- Season with salt and pepper to taste. Serve warm.
