Ingredients

  • 1 pound cheese tortellini
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup heavy cream
  • 3 cups fresh spinach
  • 1/2 teaspoon crushed red pepper flakes
  • 1 cup provolone cheese, shredded
  • Salt and pepper to taste

Instructions

  1. Cook the tortellini according to package instructions; drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add onion and garlic; sauté until softened.
  3. Add the diced tomatoes, and bring to a simmer.
  4. Stir in heavy cream, spinach, and red pepper flakes; cook until spinach wilts.
  5. Toss in the cooked tortellini and provolone cheese; mix until well combined and cheese is melted.
  6. Season with salt and pepper to taste. Serve warm.
