Description

This Marinated Za’atar Bean Salad is a refreshing blend of beans and Middle Eastern flavors, perfect for a healthy lunch or side dish.


Ingredients

  • 1 can chickpeas, drained and rinsed
  • 1 can black beans, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons za’atar spice blend
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • salt to taste

Instructions

  1. In a large bowl, combine chickpeas, black beans, cherry tomatoes, cucumber, red onion, and parsley.
  2. In a small bowl, whisk together za’atar, olive oil, lemon juice, and salt.
  3. Pour the za’atar dressing over the salad and toss to combine.
  4. Let it marinate in the fridge for at least 30 minutes before serving.
