Description

Maple Sausage and Sweet Potato Breakfast Casserole is a cozy fall dish, blending sweet maple syrup, savory sausage, and roasted sweet potatoes into one wholesome bake.


Ingredients

  • 1 lb (450g) ground maple sausage (or maple chicken sausage, removed from casing)
  • 1 medium sweet potato (about 250g), peeled and diced
  • 1 tablespoon olive oil
  • 6 large eggs
  • 1/2 cup unsweetened almond milk or regular milk (120ml)
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika (optional)
  • 1/4 cup real maple syrup (60ml)
  • 1/2 cup shredded cheddar or dairy-free cheese (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×9-inch baking dish or similar casserole pan.
  2. Toss diced sweet potatoes with olive oil and roast for 20–25 minutes until tender and lightly golden, flipping halfway.
  3. In a skillet over medium heat, cook the maple sausage until browned and cooked through. Drain excess fat and set aside.
  4. In a mixing bowl, whisk eggs, milk, maple syrup, salt, pepper, garlic powder, and paprika until smooth.
  5. Layer roasted sweet potatoes in the dish, add sausage on top, and pour egg mixture evenly over everything. Sprinkle cheese if desired.
  6. Bake uncovered for 30–35 minutes until eggs are set and top is golden. Rest 5 minutes before slicing and serving.
