- 1 lb (450g) ground maple sausage (or maple chicken sausage, removed from casing)
- 1 medium sweet potato (about 250g), peeled and diced
- 1 tablespoon olive oil
- 6 large eggs
- 1/2 cup unsweetened almond milk or regular milk (120ml)
- 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon smoked paprika (optional)
- 1/4 cup real maple syrup (60ml)
- 1/2 cup shredded cheddar or dairy-free cheese (optional)
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a 9×9-inch baking dish or similar casserole pan.
- Toss diced sweet potatoes with olive oil and roast for 20–25 minutes until tender and lightly golden, flipping halfway.
- In a skillet over medium heat, cook the maple sausage until browned and cooked through. Drain excess fat and set aside.
- In a mixing bowl, whisk eggs, milk, maple syrup, salt, pepper, garlic powder, and paprika until smooth.
- Layer roasted sweet potatoes in the dish, add sausage on top, and pour egg mixture evenly over everything. Sprinkle cheese if desired.
- Bake uncovered for 30–35 minutes until eggs are set and top is golden. Rest 5 minutes before slicing and serving.
