Ingredients

  • 1 cup Milk
  • 1/3 cup Oil
  • 1 large Egg

  • 1/2 cup Chopped Pecans
  • 1 cup Chopped Strawberries
  • 1/2 cup Chopped Strawberries (for glaze)
  • 1 teaspoon Vanilla (for glaze)
  • 2 tablespoons Melted Butter
  • 1 cup Powdered Sugar
  • 1/4 cup Heavy Cream

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Whisk together the sugar, milk, oil, egg, and vanilla in a large bowl until smooth.
  3. In a separate bowl, combine the flour, baking powder, and salt.
  4. Combine the dry and wet mixtures until just incorporated.
  5. Toss strawberries and pecans in a bit of flour (optional) and fold them into the batter gently.
  6. Pour the batter into a greased 9×5 loaf pan and spread evenly.
  7. Bake for 55-60 minutes, checking with a toothpick in the center; it should come out clean or with a few moist crumbs.
  8. Cool the bread in the pan for 10 minutes before transferring it to a wire rack.
  9. Prepare the glaze by mixing the ingredients until smooth and drizzle over the cooled bread.
