A delicious Tomato Galette recipe that transforms fresh summer tomatoes into a rustic yet elegant dish.

- 1 cup All-purpose flour
- 1/2 cup Parmesan cheese, grated
- 1 tbsp Italian seasoning, dried
- 1/2 tsp Freshly ground black pepper
- 1 tbsp Sugar
- 1 tsp Kosher salt
- 1/2 cup Unsalted butter, very cold and diced
- 3–4 tbsp Ice water
- 2 tbsp Olive oil
- 1 medium onion, sliced
- 2 cloves Garlic, minced
- 1 cup White cheddar cheese, shredded
- 1 tbsp Parmesan cheese, grated
- 1 tbsp Fresh thyme, minced
- 1 tbsp Fresh parsley, minced
- 1 tsp Fresh chives, minced
- 4 large tomatoes, sliced into rounds
- to taste Kosher salt and pepper
- 1/4 cup Heavy cream
Instructions
- In a large bowl, mix the flour, grated parmesan, Italian seasoning, black pepper, sugar, and kosher salt.
- Cut in the cold diced butter until the mixture resembles coarse crumbs.
- Stir in the ice water until the dough comes together, form it into a disk, and refrigerate for at least 30 minutes.
- Heat olive oil in a skillet over medium heat, add the sliced onion and cook until softened, about 5-7 minutes. Stir in the minced garlic and cook for 1 more minute; then remove from heat.
- Preheat your oven to 400°F (200°C).
- On a floured surface, roll out the chilled dough into a circle about 12 inches in diameter and transfer it to a parchment-lined baking sheet.
- Spread the cooked onion and garlic mixture over the dough, leaving about a 2-inch border.
- Layer the sliced tomatoes on top, sprinkle with white cheddar cheese, additional parmesan, thyme, parsley, chives, and season with salt and pepper.
- Gently fold the edges of the dough over the filling.
- Drizzle the heavy cream over the top of the filling.
- Bake for 30-35 minutes, or until the crust is golden brown.
- Allow to cool slightly before slicing and serving.
Notes
- Use fresh, ripe tomatoes for the best flavor.
- Feel free to experiment with different cheeses.
- Serve warm or at room temperature.
