Description

A delicious Tomato Galette recipe that transforms fresh summer tomatoes into a rustic yet elegant dish.


Ingredients

  • 1 cup All-purpose flour
  • 1/2 cup Parmesan cheese, grated
  • 1 tbsp Italian seasoning, dried
  • 1/2 tsp Freshly ground black pepper
  • 1 tbsp Sugar
  • 1 tsp Kosher salt
  • 1/2 cup Unsalted butter, very cold and diced
  • 34 tbsp Ice water
  • 2 tbsp Olive oil
  • 1 medium onion, sliced
  • 2 cloves Garlic, minced
  • 1 cup White cheddar cheese, shredded
  • 1 tbsp Parmesan cheese, grated
  • 1 tbsp Fresh thyme, minced
  • 1 tbsp Fresh parsley, minced
  • 1 tsp Fresh chives, minced
  • 4 large tomatoes, sliced into rounds
  • to taste Kosher salt and pepper
  • 1/4 cup Heavy cream

Instructions

  1. In a large bowl, mix the flour, grated parmesan, Italian seasoning, black pepper, sugar, and kosher salt.
  2. Cut in the cold diced butter until the mixture resembles coarse crumbs.
  3. Stir in the ice water until the dough comes together, form it into a disk, and refrigerate for at least 30 minutes.
  4. Heat olive oil in a skillet over medium heat, add the sliced onion and cook until softened, about 5-7 minutes. Stir in the minced garlic and cook for 1 more minute; then remove from heat.
  5. Preheat your oven to 400°F (200°C).
  6. On a floured surface, roll out the chilled dough into a circle about 12 inches in diameter and transfer it to a parchment-lined baking sheet.
  7. Spread the cooked onion and garlic mixture over the dough, leaving about a 2-inch border.
  8. Layer the sliced tomatoes on top, sprinkle with white cheddar cheese, additional parmesan, thyme, parsley, chives, and season with salt and pepper.
  9. Gently fold the edges of the dough over the filling.
  10. Drizzle the heavy cream over the top of the filling.
  11. Bake for 30-35 minutes, or until the crust is golden brown.
  12. Allow to cool slightly before slicing and serving.

Notes

  • Use fresh, ripe tomatoes for the best flavor.
  • Feel free to experiment with different cheeses.
