  • 4 boneless, skinless chicken breasts
  • 8 ounces cream cheese, softened
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped pickled jalapeños
  • 2 tablespoons chopped fresh cilantro
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and black pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Butterfly each chicken breast by slicing horizontally almost all the way through, leaving one side intact. Open the chicken flat like a book.
  3. In a medium bowl, combine the softened cream cheese, shredded cheddar cheese, chopped pickled jalapeños, fresh cilantro, garlic powder, and onion powder. Mix well until all ingredients are fully incorporated.
  4. Season the inside of each chicken breast with salt and pepper.
  5. Divide the cream cheese mixture evenly among the chicken breasts. Spread the mixture onto one half of each butterflied chicken breast.
  6. Fold the other half of the chicken breast over the filling, creating a stuffed pocket. Secure the edges with toothpicks if needed.
  7. Season the outside of the stuffed chicken breasts with salt and pepper.
  8. Heat olive oil in an oven-safe skillet over medium-high heat. Sear the stuffed chicken breasts for 2-3 minutes per side until golden brown.
  9. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the internal temperature of the chicken reaches 165°F (74°C).
  10. Remove from the oven, let rest for a few minutes, then serve your irresistible jalapeno popper stuffed chicken.
