Ingredients

  • 2 (6 oz) salmon fillets
  • 2 tbsp pure honey
  • 2 tbsp Sriracha sauce
  • 2 garlic cloves, minced
  • 1 cup uncooked white or brown rice
  • 1 cup bell peppers, sliced (mixed colors)
  • 1 cup cucumbers, thinly sliced
  • 2 green onions, chopped

Instructions

  1. Rinse salmon fillets under cold water and pat dry. Chop bell peppers and slice cucumbers; set aside.
  2. In a bowl, whisk together honey, Sriracha, minced garlic, and a pinch of salt.
  3. Heat oil in a non-stick skillet over medium-high heat. Cook salmon skin-side down for 4-5 minutes until crispy; flip gently.
  4. Brush glaze over the salmon while cooking the other side for an additional 3-4 minutes until caramelized.
  5. Prepare rice according to package instructions and fluff with a fork.
  6. Assemble bowls with rice at the base, topped with veggies and glazed salmon. Drizzle remaining glaze over the top.
