- 1 cup bell peppers, sliced (mixed colors)
- 1 cup cucumbers, thinly sliced
- 2 green onions, chopped
Instructions
- Rinse salmon fillets under cold water and pat dry. Chop bell peppers and slice cucumbers; set aside.
- In a bowl, whisk together honey, Sriracha, minced garlic, and a pinch of salt.
- Heat oil in a non-stick skillet over medium-high heat. Cook salmon skin-side down for 4-5 minutes until crispy; flip gently.
- Brush glaze over the salmon while cooking the other side for an additional 3-4 minutes until caramelized.
- Prepare rice according to package instructions and fluff with a fork.
