Ingredients

  • 3 tablespoons extra virgin olive oil
  • 2 teaspoons garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • ½ cup grated Parmesan cheese

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment.
  2. Scrub potatoes, pat dry, and slice in half lengthwise. Scoop out flesh, leaving ¼ inch around the edges.
  3. In a bowl, mix olive oil, garlic powder, oregano, thyme, salt, and pepper. Brush mixture over each potato skin.
  4. Place skins cut-side down on the baking sheet and bake for 20-25 minutes until crispy and golden.
  5. Flip skins, sprinkle Parmesan inside each skin, and return to oven for an additional 5-7 minutes until cheese is melted.
