Ingredients
Scale
- 4 boneless, skinless chicken breasts, pounded to 1/2-inch thickness
- 1/2 cup all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 3 tablespoons olive oil
- 3 tablespoons unsalted butter
- 1/2 cup dry white wine or chicken broth
- 1/4 cup fresh lemon juice
- 2 tablespoons capers, drained
- 2 tablespoons chopped fresh parsley
Instructions
- Season the chicken breasts with salt and pepper. Dredge each piece of chicken in flour, shaking off any excess.
- Heat olive oil in a large skillet over medium-high heat. Add the floured chicken and cook for 3-4 minutes per side, or until golden brown and cooked through. Remove chicken from the skillet and set aside.
- Reduce heat to medium. Add butter to the skillet, melting it.
- Pour in white wine (or chicken broth) and lemon juice, scraping up any browned bits from the bottom of the pan. Bring to a simmer.
- Stir in capers and parsley. Return the cooked chicken to the skillet, coating it in the zesty sauce.
- Serve the irresistible chicken piccata immediately, garnished with extra fresh parsley if desired.
Notes
- For extra zesty flavor, add a pinch of lemon zest to the sauce.
- This zesty chicken piccata pairs well with pasta, rice, or crusty bread.
- Ensure chicken is pounded to an even thickness for uniform cooking.
- Adjust capers to your taste for this flavorful chicken piccata.
