- 3 boneless, skinless chicken breasts (about 1.5 lbs)
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 medium sweet onion, sliced
- 2 cups shredded Monterey Jack cheese
- 4 large flour tortillas
- 2 tbsp fajita seasoning
- 2 tbsp olive oil
Instructions
- In a bowl, mix cubed chicken with fajita seasoning and olive oil. Let sit for at least 15 minutes.
- Heat olive oil in a large skillet over medium heat. Add onions and bell peppers; cook until soft (5-7 minutes).
- Add marinated chicken to the skillet; sauté until browned and cooked through (6-8 minutes).
- On half of each tortilla, sprinkle cheese then top with chicken and veggies; fold over.
- In the skillet, cook each folded tortilla until golden brown (3-4 minutes per side). Cut into wedges and serve hot.
