Description

Chicken Fajita Quesadillas are a flavor-packed delight that combines tender marinated chicken, colorful bell peppers, and melted cheese all nestled in crispy tortillas.


Ingredients

  • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 medium sweet onion, sliced
  • 2 cups shredded Monterey Jack cheese
  • 4 large flour tortillas
  • 2 tbsp fajita seasoning
  • 2 tbsp olive oil

Instructions

  1. In a bowl, mix cubed chicken with fajita seasoning and olive oil. Let sit for at least 15 minutes.
  2. Heat olive oil in a large skillet over medium heat. Add onions and bell peppers; cook until soft (5-7 minutes).
  3. Add marinated chicken to the skillet; sauté until browned and cooked through (6-8 minutes).
  4. On half of each tortilla, sprinkle cheese then top with chicken and veggies; fold over.
  5. In the skillet, cook each folded tortilla until golden brown (3-4 minutes per side). Cut into wedges and serve hot.
