Ingredients

  • 5 medium Peaches (unpeeled and thinly sliced)
  • 1/2 cup Light Brown Sugar (packed)
  • 2 Tbsp. Cornstarch (helps thicken the juices)
  • 2 tsp. Fresh Lemon Juice (balances sweetness)
  • 1/2 tsp. Ground Cinnamon (for warmth)
  • 1/4 tsp. Ground Cardamom (complements peaches)
  • 1/4 tsp. Kosher Salt (enhances flavor)
  • 1 package Refrigerated Piecrusts (14.1-oz. package)
  • for work surface All-Purpose Flour (prevents sticking)
  • 1 large Egg (for egg wash)
  • 1 Tbsp. Water (mixed with egg)
  • 2 tsp. Granulated Sugar (for topping)

Instructions

  1. Preheat the oven as directed for the piecrust.
  2. Combine sliced peaches, brown sugar, cornstarch, lemon juice, cinnamon, cardamom, and kosher salt in a large bowl. Toss gently until well mixed.
  3. Roll out the refrigerated piecrusts on a lightly floured surface until they’re about 1/8 inch thick.
  4. Place the bottom crust into your individual pie dishes and evenly fill each with the peach mixture.
  5. Cover with the top crusts, sealing the edges with a gentle pinch or fork. Cut a few slits in the top for steam to escape.
  6. Beat the egg with water in a small bowl, then brush this mixture over the crusts. Sprinkle with granulated sugar.
  7. Bake according to the piecrust package instructions.
