Description
Chewy, warm cinnamon cookies infused with sweet heat from hot honey. Soft centers, crisp edges, and a cozy flavor that’s familiar yet exciting.

- 1 cup unsalted butter, at room temperature
- 4 tablespoons oil
- 2 cups light brown sugar
- 1/4 cup honey
- 1/4 cup hot honey (chili-infused honey)
- 2 large eggs
- 2 teaspoons vanilla extract
- 5 cups all-purpose flour
- 4 teaspoons baking soda
- 1 teaspoon salt
- 2 tablespoons cinnamon
Instructions
- Combine butter, oil, brown sugar, honey, and hot honey in a large bowl or stand mixer. Mix on medium speed for 1 minute until smooth.
- Add eggs and vanilla; mix on low until incorporated.
- Scrape the bowl, then add flour, baking soda, salt, and cinnamon. Mix on low until just combined, then fold in any remaining dry bits.
- Line a baking sheet with wax paper and scoop 2-tablespoon dough balls onto it.
- Cover and refrigerate for 2 hours until firm.
- Preheat oven to 350°F (175°C). Line a new baking sheet with parchment or a silpat.
- Arrange 9–12 dough balls on the sheet and bake 10–12 minutes, until edges are set and lightly browned.
- Cool slightly on the baking sheet, then transfer to a rack. Repeat with remaining dough.
