- 1 lb lean ground turkey
- 1 can (14.5 oz) fire-roasted diced tomatoes
- 1 can (15 oz) kidney beans, drained
- 1 medium yellow onion, chopped
- 3 cloves garlic, minced
- 2 tsp cumin powder
- 2 tsp chili powder (adjust to taste)
- 1 bell pepper, chopped
- 1 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Sauté chopped onions and bell peppers until softened.
- Add ground turkey to the pot, stirring until browned with no pink remaining.
- Stir in minced garlic, cumin powder, and chili powder; cook for about 1 minute until fragrant.
- Add diced tomatoes and kidney beans; mix well.
- Bring to a boil then reduce heat to low. Let simmer uncovered for about 30 minutes until thickened.
- Taste and adjust seasoning before serving.
