- 2 medium zucchini
- 1 red bell pepper
- 1 cup cherry tomatoes
- 1/4 cup red onion
- 1/4 cup feta cheese
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- Salt and pepper to taste
Instructions
- Preheat the grill to medium-high heat.
- Slice the zucchini and red bell pepper.
- Toss the vegetables with olive oil, salt, and pepper.
- Grill the zucchini and bell pepper for 5-7 minutes until tender.
- Remove from the grill and let them cool slightly.
- Chop the grilled vegetables and combine them with cherry tomatoes and red onion in a bowl.
- Drizzle with balsamic vinegar and sprinkle feta cheese on top.
- Toss everything gently and serve warm or at room temperature.
