- 1 cup fresh parsley
- 2 cups spinach

- 4 cups vegetable broth
- 1 can coconut milk

Instructions
- Start by washing and drying your fresh basil, parsley, and spinach.
- Heat a tablespoon of olive oil in a large pot over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
- Toss in the chopped herbs and spinach, then pour in your vegetable broth. Stir together.
- Allow the mixture to simmer for 5 minutes. Blend until smooth.
