A refreshing and healthy Greek-inspired chicken salad bowl topped with tzatziki sauce.
Ingredients

- 2 cups cooked chicken breast, shredded
- 1 cup cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/2 cup red onion, thinly sliced
- 1/2 cup Kalamata olives, pitted and sliced
- 1 cup romaine lettuce, chopped
- 1/2 cup plain Greek yogurt
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 2 cloves garlic, minced
- 1 tablespoon fresh dill, chopped
- salt and pepper to taste
Instructions
- In a mixing bowl, combine Greek yogurt, olive oil, lemon juice, garlic, dill, salt, and pepper to make the tzatziki sauce.
- In a large bowl, combine shredded chicken, cucumber, cherry tomatoes, red onion, and olives.
- Drizzle the tzatziki sauce over the chicken mixture and toss gently to combine.
- Serve the chicken salad over a bed of romaine lettuce.
