Description

A refreshing and healthy Greek-inspired chicken salad bowl topped with tzatziki sauce.


Ingredients

  • 2 cups cooked chicken breast, shredded
  • 1 cup cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1 cup romaine lettuce, chopped
  • 1/2 cup plain Greek yogurt
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 2 cloves garlic, minced
  • 1 tablespoon fresh dill, chopped
  • salt and pepper to taste

Instructions

  1. In a mixing bowl, combine Greek yogurt, olive oil, lemon juice, garlic, dill, salt, and pepper to make the tzatziki sauce.
  2. In a large bowl, combine shredded chicken, cucumber, cherry tomatoes, red onion, and olives.
  3. Drizzle the tzatziki sauce over the chicken mixture and toss gently to combine.
  4. Serve the chicken salad over a bed of romaine lettuce.
