This Greek Chicken Quinoa Gyro Bowl is a healthy and flavorful meal packed with protein and fresh ingredients.
Ingredients

- 1 cup quinoa
- 2 cups water
- 2 chicken breasts, cooked and shredded
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red onion, thinly sliced
- 1/2 cup feta cheese, crumbled
- 1/4 cup kalamata olives, pitted and sliced
- 1/4 cup Greek yogurt
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Rinse quinoa under cold water. In a medium saucepan, combine quinoa and water. Bring to a boil, then reduce to a simmer and cover. Cook for 15 minutes or until water is absorbed. Fluff with a fork and let cool.
- In a large bowl, combine shredded chicken, cherry tomatoes, cucumber, red onion, feta cheese, and kalamata olives.
- In a small bowl, whisk together Greek yogurt, olive oil, lemon juice, dried oregano, salt, and pepper.
- Add the cooled quinoa to the large bowl with the chicken and vegetables. Pour dressing over the top and toss to combine.
- Serve in bowls and enjoy!
