- 1 1/3 cups self-raising flour
- 1 tsp ground cardamom
- 40 g butter, chilled and chopped
- 2 tbsp brown sugar
- 2/3 cup milk
- Thickened cream, to serve
- 50 g butter, chopped
- 1 1/4 cups firmly packed brown sugar
- 1/4 cup golden syrup
- 2 1/4 cups cold water
Instructions
- Combine butter, brown sugar, golden syrup, and 2 1/4 cups water in a deep, heavy-based frying pan over low heat. Stir for 5 minutes until sugar dissolves, then bring to a gentle boil. Remove from heat and set aside.
- Sift flour and cardamom into a bowl. Rub in butter with fingertips until mixture resembles breadcrumbs. Stir in brown sugar, make a well in the center, and pour in milk. Mix with a wooden spoon until a soft dough forms.
- Return the sauce to a gentle simmer over medium-low heat. Drop heaped tablespoons of dough into the syrup. Cover tightly with a lid or foil, reduce heat to low, and cook for about 15 minutes, until dumplings are puffed and cooked through.
- Spoon dumplings into bowls, drizzle with plenty of warm caramel sauce, and serve immediately with thickened cream, custard, or ice cream.
