Savory & Sweet Goat Cheese Bread with Cranberries and Sourdough
Ingredients

- 500 g (about 4 cups) bread flour
- 350 g (1 ½ cups) water, room temperature
- 100 g (about ½ cup) active sourdough starter
- 10 g (1 ½ tsp) salt
- 100 g (1 cup) dried cranberries
- 120 g (4 oz) goat cheese, crumbled or in chunks
Instructions
- Mix flour and water until combined. Cover and rest for 30 minutes.
- Incorporate sourdough starter and salt until fully mixed.
- Rest dough for 2 hours, performing stretch and folds every 30 minutes.
- Gently fold in cranberries and goat cheese during final fold.
- Shape dough into a round or oval and place into floured banneton.
- Cover and refrigerate for 8–12 hours.
- Bake in preheated Dutch oven at 475°F (245°C) for 20 minutes covered, then 25 minutes uncovered.
- Cool completely on a rack before slicing.
