Description

Savory & Sweet Goat Cheese Bread with Cranberries and Sourdough


Ingredients

Scale
  • 500 g (about 4 cups) bread flour
  • 350 g (1 ½ cups) water, room temperature
  • 100 g (about ½ cup) active sourdough starter
  • 10 g (1 ½ tsp) salt
  • 100 g (1 cup) dried cranberries
  • 120 g (4 oz) goat cheese, crumbled or in chunks

Instructions

  1. Mix flour and water until combined. Cover and rest for 30 minutes.
  2. Incorporate sourdough starter and salt until fully mixed.
  3. Rest dough for 2 hours, performing stretch and folds every 30 minutes.
  4. Gently fold in cranberries and goat cheese during final fold.
  5. Shape dough into a round or oval and place into floured banneton.
  6. Cover and refrigerate for 8–12 hours.
  7. Bake in preheated Dutch oven at 475°F (245°C) for 20 minutes covered, then 25 minutes uncovered.
  8. Cool completely on a rack before slicing.
