Description

A deliciously spiced gingerbread loaf that utilizes sourdough discard for a unique flavor and texture.


Ingredients

  • 1 cup sourdough discard
  • 1/2 cup molasses
  • 1/4 cup brown sugar
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 1/2 cup vegetable oil
  • 2 eggs

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large mixing bowl, combine sourdough discard, molasses, and brown sugar.
  3. Add the vegetable oil and eggs, mixing until well blended.
  4. In another bowl, whisk together flour, baking soda, spices, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  6. Pour the batter into the prepared loaf pan.
  7. Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
  8. Let it cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
