A delicious and vibrant corn salad that incorporates Fritos for a delightful crunch.
Ingredients

- 1 can corn, drained
- 1 cup diced bell pepper
- 1 cup diced tomatoes
- 1/2 cup diced red onion
- 1 cup shredded cheddar cheese
- 1 cup Fritos corn chips
- 1/2 cup ranch dressing
- 1 tablespoon lime juice
Instructions
- In a large bowl, combine corn, bell pepper, tomatoes, red onion, and cheddar cheese.
- In a separate small bowl, mix together ranch dressing and lime juice.
- Pour the dressing over the salad and mix well.
- Just before serving, gently fold in the Fritos to maintain their crunch.
