Description
French Onion Soup Bites are elegant appetizers made from classic French onion soup. They feature caramelized onions and melted Gruyère cheese in phyllo shells.
Ingredients

- 2 tablespoons olive oil or butter
- 2 large yellow onions, thinly sliced
- 1/4 teaspoon salt
- 1/2 teaspoon sugar (optional)
- 1 tablespoon balsamic vinegar (optional)
- 1/2 teaspoon fresh thyme (or 1/4 teaspoon dried)
- 12 frozen phyllo shells or mini tart cups
- 1/2 cup grated Gruyère or Swiss cheese
- Fresh parsley, for garnish (optional)
- Add sautéed mushrooms
- Use goat cheese or white cheddar
- Make puff pastry or vol-au-vent shells
- Add a whisked egg for mini quiche-style bites
Instructions
- Heat olive oil in a skillet over medium-low heat. Add sliced onions and salt. Cook 25–30 minutes, stirring occasionally, until deeply golden. Add sugar and balsamic if using, then stir in thyme.
- Heat oven to 350°F (175°C).
- Place frozen phyllo cups on a baking sheet. If using homemade shells, prebake pastry for 10 minutes.
- Add a spoonful of caramelized onions to each shell.
- Top each with grated Gruyère or Swiss cheese.
- Bake 10–12 minutes until cheese is melted and bubbly.
- Garnish with fresh parsley and serve warm.
