Description

French Onion Soup Bites are elegant appetizers made from classic French onion soup. They feature caramelized onions and melted Gruyère cheese in phyllo shells.


Ingredients

Scale
  • 2 tablespoons olive oil or butter
  • 2 large yellow onions, thinly sliced
  • 1/4 teaspoon salt
  • 1/2 teaspoon sugar (optional)
  • 1 tablespoon balsamic vinegar (optional)
  • 1/2 teaspoon fresh thyme (or 1/4 teaspoon dried)
  • 12 frozen phyllo shells or mini tart cups
  • 1/2 cup grated Gruyère or Swiss cheese
  • Fresh parsley, for garnish (optional)
  • Add sautéed mushrooms
  • Use goat cheese or white cheddar
  • Make puff pastry or vol-au-vent shells
  • Add a whisked egg for mini quiche-style bites

Instructions

  1. Heat olive oil in a skillet over medium-low heat. Add sliced onions and salt. Cook 25–30 minutes, stirring occasionally, until deeply golden. Add sugar and balsamic if using, then stir in thyme.
  2. Heat oven to 350°F (175°C).
  3. Place frozen phyllo cups on a baking sheet. If using homemade shells, prebake pastry for 10 minutes.
  4. Add a spoonful of caramelized onions to each shell.
  5. Top each with grated Gruyère or Swiss cheese.
  6. Bake 10–12 minutes until cheese is melted and bubbly.
  7. Garnish with fresh parsley and serve warm.
