Fall Pavlova combines crisp meringue, caramelized apples, and cinnamon whipped cream for a light and elegant dessert.

- For the Pavlova Base:
- 4 large egg whites (room temperature)
- 1 cup (200g) granulated sugar
- 1 tsp white vinegar
- 2 tsp cornstarch
- 1 tsp vanilla extract
- For the Cinnamon Whipped Cream:
- 1 cup (240ml) heavy whipping cream
- 2 tbsp powdered sugar
- 1 tsp ground cinnamon
- 1/2 tsp vanilla extract
- For the Caramelized Apples:
- 2 apples (peeled, cored, sliced) – Honeycrisp or Gala recommended
- 2 tbsp unsalted butter
- 2 tbsp brown sugar
- 1/2 tsp cinnamon
- Pinch of salt
- Optional:
- A drizzle of maple syrup or honey
- Chopped toasted pecans for garnish
Instructions
- Preheat oven to 300°F (150°C). Line a baking sheet with parchment paper and mark an 8-inch circle as a guide.
- Beat egg whites until soft peaks form, then gradually add sugar. Beat until stiff, glossy peaks form. Add vinegar, cornstarch, and vanilla; mix until just combined.
- Spoon meringue onto the circle, forming a dome with an indent in the center. Reduce oven temperature to 250°F (120°C) and bake for 90 minutes. Turn off oven and let cool completely inside.
- Melt butter in a skillet. Add apples, brown sugar, cinnamon, and salt. Cook 8–10 minutes until tender and glazed. Cool before using.
- Whip cream, powdered sugar, cinnamon, and vanilla until soft peaks form.
- Spread cinnamon whipped cream over the cooled pavlova base, top with caramelized apples, drizzle with maple syrup, and sprinkle with toasted pecans.
