Description

Fall Pavlova combines crisp meringue, caramelized apples, and cinnamon whipped cream for a light and elegant dessert.


Ingredients

  • For the Pavlova Base:
  • 4 large egg whites (room temperature)
  • 1 cup (200g) granulated sugar
  • 1 tsp white vinegar
  • 2 tsp cornstarch
  • 1 tsp vanilla extract
  • For the Cinnamon Whipped Cream:
  • 1 cup (240ml) heavy whipping cream
  • 2 tbsp powdered sugar
  • 1 tsp ground cinnamon
  • 1/2 tsp vanilla extract
  • For the Caramelized Apples:
  • 2 apples (peeled, cored, sliced) – Honeycrisp or Gala recommended
  • 2 tbsp unsalted butter
  • 2 tbsp brown sugar
  • 1/2 tsp cinnamon
  • Pinch of salt
  • Optional:
  • A drizzle of maple syrup or honey
  • Chopped toasted pecans for garnish

Instructions

  1. Preheat oven to 300°F (150°C). Line a baking sheet with parchment paper and mark an 8-inch circle as a guide.
  2. Beat egg whites until soft peaks form, then gradually add sugar. Beat until stiff, glossy peaks form. Add vinegar, cornstarch, and vanilla; mix until just combined.
  3. Spoon meringue onto the circle, forming a dome with an indent in the center. Reduce oven temperature to 250°F (120°C) and bake for 90 minutes. Turn off oven and let cool completely inside.
  4. Melt butter in a skillet. Add apples, brown sugar, cinnamon, and salt. Cook 8–10 minutes until tender and glazed. Cool before using.
  5. Whip cream, powdered sugar, cinnamon, and vanilla until soft peaks form.
  6. Spread cinnamon whipped cream over the cooled pavlova base, top with caramelized apples, drizzle with maple syrup, and sprinkle with toasted pecans.
