- 6 Tablespoons unsalted butter
- 1 large egg
- 1 teaspoon almond extract
- 2 cups almond flour
- 0.25 teaspoon salt
- 1 teaspoon baking powder
- sliced or whole almonds
Instructions
- Preheat your oven to 350°F (180°C).
- Cream together the cane sugar and softened butter in a mixing bowl for 2-3 minutes until light and fluffy.
- Add the egg and almond extract, mixing until combined into a smooth blend.
- Combine almond flour, salt, and baking powder in a separate bowl, whisking together.
- Gradually mix the dry ingredients with the wet mixture until just combined.
- Scoop the dough onto a baking sheet lined with parchment paper, leaving space in between.
- Top each cookie with sliced or whole almonds, pressing them gently into the dough.
- Bake for 10-12 minutes until the edges are golden brown.
- Cool the cookies on the baking sheet for a few minutes before transferring to a wire rack.
