- 2 pounds chicken thighs
- 1 can chipotle peppers in adobo sauce
- 1 medium onion, chopped
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1 teaspoon oregano
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Heat olive oil in a pan over medium heat. Sauté onion and garlic until translucent.
- In a blender, combine chipotle peppers, sautéed onion and garlic, cumin, paprika, oregano, salt, and black pepper. Blend until smooth.
- Place chicken thighs in the crockpot and pour the sauce over them, ensuring they are well coated.
- Cover and cook on low for 6-8 hours or on high for 4-5 hours.
- Once cooked, shred the chicken with two forks and mix it well with the sauce.
- Serve warm, garnished with your favorite toppings.
