Description

Tender and flavorful chicken thighs cooked in a spicy chipotle sauce, perfect for any meal.


Ingredients

  • 2 pounds chicken thighs
  • 1 can chipotle peppers in adobo sauce
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon oregano
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Heat olive oil in a pan over medium heat. Sauté onion and garlic until translucent.
  2. In a blender, combine chipotle peppers, sautéed onion and garlic, cumin, paprika, oregano, salt, and black pepper. Blend until smooth.
  3. Place chicken thighs in the crockpot and pour the sauce over them, ensuring they are well coated.
  4. Cover and cook on low for 6-8 hours or on high for 4-5 hours.
  5. Once cooked, shred the chicken with two forks and mix it well with the sauce.
  6. Serve warm, garnished with your favorite toppings.
