- 4 bone-in, skin-on chicken thighs
- 1 cup mushrooms, sliced
- 1 cup heavy cream
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 tablespoon fresh parsley, chopped
Instructions
- In a skillet, heat olive oil over medium heat. Add the chicken thighs and brown on both sides.
- Transfer chicken to the crockpot and add mushrooms, onion, garlic, salt, pepper, thyme, and rosemary.
- Pour heavy cream over the top, ensuring the chicken is covered.
- Cover and cook on low for 6-7 hours or on high for 3-4 hours.
- Once cooked, check that the chicken reaches an internal temperature of 165°F.
- Garnish with fresh parsley before serving.
