A creamy and comforting soup made with tender chicken, gnocchi, and fresh vegetables, all cooked together in a slow cooker.

- 1 pound boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 3 carrots, sliced
- 2 stalks celery, sliced
- 4 cups chicken broth
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- 1/2 teaspoon black pepper
- 1 pound gnocchi
- 1 cup heavy cream
- 2 cups fresh spinach
Instructions
- Heat the olive oil in a skillet over medium heat. Add the onion, garlic, carrots, and celery, and sauté until softened.
- Transfer the sautéed vegetables to the crockpot. Add the chicken breast, chicken broth, thyme, parsley, and pepper.
- Cook on low for 6-7 hours or high for 3-4 hours, until the chicken is fully cooked.
- Remove the chicken, shred it, and return it to the pot.
- Add the gnocchi and cook on high for an additional 30 minutes.
- Stir in the heavy cream and spinach, cooking until the spinach wilts.
