Description

A creamy and comforting soup made with tender chicken, gnocchi, and fresh vegetables, all cooked together in a slow cooker.


Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 3 carrots, sliced
  • 2 stalks celery, sliced
  • 4 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1/2 teaspoon black pepper
  • 1 pound gnocchi
  • 1 cup heavy cream
  • 2 cups fresh spinach

Instructions

  1. Heat the olive oil in a skillet over medium heat. Add the onion, garlic, carrots, and celery, and sauté until softened.
  2. Transfer the sautéed vegetables to the crockpot. Add the chicken breast, chicken broth, thyme, parsley, and pepper.
  3. Cook on low for 6-7 hours or high for 3-4 hours, until the chicken is fully cooked.
  4. Remove the chicken, shred it, and return it to the pot.
  5. Add the gnocchi and cook on high for an additional 30 minutes.
  6. Stir in the heavy cream and spinach, cooking until the spinach wilts.
