- 1 small onion, chopped
- 3 cloves garlic, minced
- 1 can (14 oz) diced tomatoes
- 3 cups vegetable broth
- 12 oz cheese tortellini
- 1 cup heavy cream
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1 cup spinach
- Parmesan cheese for serving
Instructions
- Heat olive oil in a pan over medium heat.
- Add onion and garlic, sauté until soft.
- Stir in diced tomatoes and vegetable broth.
- Bring to a boil, then add the tortellini.
- Cook for 5-7 minutes or until tortellini is tender.
- Stir in heavy cream, basil, oregano, salt, and pepper.
- Add spinach and cook until wilted.
