- 1 pound cremini mushrooms, sliced
- 2 cloves garlic, minced
- 5 ounces fresh spinach
- 1 cup orzo pasta
- 2 cups vegetable broth
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- Salt and black pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat. Add mushrooms and cook until browned, about 5-7 minutes.
- Add minced garlic and cook for 1 minute more until fragrant.
- Stir in the fresh spinach and cook until wilted, about 2-3 minutes.
- Add the orzo pasta and vegetable broth to the skillet. Bring to a boil, then reduce heat and simmer, covered, for 10-12 minutes, or until the orzo is cooked and most of the liquid is absorbed.
- Stir in the heavy cream and Parmesan cheese. Cook, stirring, until the sauce is creamy and heated through.
- Season with salt and black pepper to taste. Serve immediately.
