Ingredients

  • 1 pound cremini mushrooms, sliced
  • 2 cloves garlic, minced
  • 5 ounces fresh spinach
  • 1 cup orzo pasta
  • 2 cups vegetable broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • Salt and black pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add mushrooms and cook until browned, about 5-7 minutes.
  2. Add minced garlic and cook for 1 minute more until fragrant.
  3. Stir in the fresh spinach and cook until wilted, about 2-3 minutes.
  4. Add the orzo pasta and vegetable broth to the skillet. Bring to a boil, then reduce heat and simmer, covered, for 10-12 minutes, or until the orzo is cooked and most of the liquid is absorbed.
  5. Stir in the heavy cream and Parmesan cheese. Cook, stirring, until the sauce is creamy and heated through.
