- 1.5 lbs boneless, skinless chicken breasts (about 2 large pieces)
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 tbsp olive oil
- 1 tbsp unsalted butter
- 5 cloves garlic, minced
- 2 cups baby spinach (lightly packed)
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
Instructions
- Pat chicken dry and season with salt and pepper. Heat olive oil in a large skillet over medium-high heat and sear chicken for 4–6 minutes per side until golden and cooked through. Remove and set aside.
- Reduce heat to medium. Add butter and minced garlic to the skillet and cook until fragrant, about 1 minute.
- Stir in baby spinach until wilted, then pour in heavy cream and bring to a gentle simmer.
- Stir in grated Parmesan until fully melted and the sauce is smooth.
- Return chicken to the skillet, spoon sauce over top, cover, and simmer for 2–3 minutes before serving.
