Ingredients

  • 23 tbsp Powdered Sugar
  • 8 oz White Chocolate or Candy Coating
  • Extra Lime Zest or Crumbs

Instructions

  1. Begin by melting the white chocolate chips in a heatproof bowl using a double boiler or microwave.
  2. In a separate bowl, beat the softened cream cheese until smooth and then mix in lime zest and key lime juice.
  3. Gradually fold the melted white chocolate into the cream cheese mixture.
  4. Cover the bowl with plastic wrap and refrigerate the mixture for 2–3 hours.
  5. Once chilled, portion the mixture into 1-inch balls and roll them to create a smooth surface.
  6. Freeze the formed truffles for about 30 minutes to hold their shape.
  7. Optional: Dip the chilled truffles in melted white chocolate or roll them in extra graham cracker crumbs.
  8. After coating, chill the truffles again until set and serve cold.
