- 8 oz Cream Cheese
- 0.25 cups Key Lime Juice
- 1 tbsp Lime Zest
- 0.5 cups Graham Cracker Crumbs
- 2–3 tbsp Powdered Sugar
- 8 oz White Chocolate or Candy Coating
- Extra Lime Zest or Crumbs
Instructions
- Begin by melting the white chocolate chips in a heatproof bowl using a double boiler or microwave.
- In a separate bowl, beat the softened cream cheese until smooth and then mix in lime zest and key lime juice.
- Gradually fold the melted white chocolate into the cream cheese mixture.
- Cover the bowl with plastic wrap and refrigerate the mixture for 2–3 hours.
- Once chilled, portion the mixture into 1-inch balls and roll them to create a smooth surface.
- Freeze the formed truffles for about 30 minutes to hold their shape.
- Optional: Dip the chilled truffles in melted white chocolate or roll them in extra graham cracker crumbs.
- After coating, chill the truffles again until set and serve cold.
