- 1 can coconut milk
- 1 cup vegetable broth
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 inch ginger, grated
- 1 cup cherry tomatoes, halved
- 1 tablespoon curry powder
- 1 tablespoon lime juice
- 1 tablespoon olive oil
- Salt to taste
- Fresh cilantro for garnish
Instructions
- In a large pot, heat olive oil over medium heat. Add onion, garlic, and ginger; sauté until soft.
- Add curry powder and cook for another minute.
- Pour in coconut milk and vegetable broth; bring to a simmer.
- Add cherry tomatoes and fish fillets, cook until the fish is opaque and flakes easily.
- Stir in lime juice and season with salt.
- Garnish with fresh cilantro before serving.
