Ingredients

  • 1 can coconut milk
  • 1 cup vegetable broth
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 inch ginger, grated
  • 1 cup cherry tomatoes, halved
  • 1 tablespoon curry powder
  • 1 tablespoon lime juice
  • 1 tablespoon olive oil
  • Salt to taste

Instructions
