  • 1 medium Yellow onion (Diced)
  • 2 medium Carrots (Diced)
  • 2 stalks Celery (Diced)
  • 3 cloves Garlic (Minced)
  • 1 tablespoon Fresh thyme (Chopped)
  • 1 tablespoon Fresh rosemary (Chopped)
  • 1/4 cup All-purpose flour
  • 6 cups Chicken broth (Homemade or store-bought)
  • 1 cup Half and half
  • 2 tablespoons Soy sauce (Low-sodium if desired)
  • 1 teaspoon Hot sauce (Optional)
  • 1 cup Long grain white rice (Uncooked)
  • 1 teaspoon Salt (Adjust to taste)
  • 1/2 teaspoon Black pepper (Freshly cracked, adjust to taste)
  • 1/4 cup Parmesan cheese (Grated)

  • 2 tablespoons Fresh parsley (Chopped)

Instructions

  1. Melt the butter in a large pot over medium heat.
  2. Add the diced onion, carrots, and celery; sauté until tender, about 5-7 minutes.
  3. Add minced garlic, thyme, rosemary, salt, pepper, Italian seasoning, mustard powder, paprika, and chili flakes; cook for 1 more minute.
  4. Stir in flour; cook for 1-2 minutes to avoid a raw taste.
  5. Gradually add chicken broth while stirring to prevent lumps; bring to a gentle simmer.
  6. Add chicken thighs; cook until completely cooked through, about 8-10 minutes.
  7. Stir in half and half, soy sauce, and hot sauce.
  8. Add uncooked rice; simmer until rice is tender, about 15-20 minutes.
  9. Adjust seasoning with salt and pepper to taste.
  10. Ladle soup into bowls; garnish with Parmesan cheese, black pepper, and parsley.
