- 80g sweetened condensed milk
- 80g butter
- 1 packet Girl Guide biscuits, finely crushed (230g / 8 oz)
- 1/2 cup dried cranberries (60g / 2 oz)
- 1/2 cup pistachios (60g / 2 oz)
- 190g white chocolate
- 1 tablespoon vegetable oil
- 2 tablespoons freeze-dried raspberries, crushed (optional)
Instructions
- Line a 20×20 cm slice tin with baking paper.
- Melt condensed milk and butter together in the microwave; stir until smooth.
- Add crushed biscuits, cranberries, and pistachios; mix until fully combined.
- Press the mixture firmly into the prepared tin and freeze while preparing the topping.
- Melt white chocolate in the microwave, add oil, and stir until smooth and glossy.
- Pour chocolate over the chilled base and spread evenly.
- Sprinkle crushed freeze-dried raspberries on top, if using.
- Chill for at least 4 hours until firm.
- Let sit at room temperature for 20 minutes before slicing into squares.
